- In a large soup pot, cook the beef until brown Add the onion and celery; saute' until tender. Remove from heat and drain any excess liquid.
- Stir in the tomatoes, broth, worcestershire sauce and seasonings. This is a good time to add Lipton Onion Soup Mix, if using. Cover and simmer on low for about 20 minutes.
- Add spinach and cook until wilted about 1-3 minutes. Top each serving with one ounce of cheese.
- 1 lb 90% Lean Ground Beef (The leaner, the better. 90% is the min. 93% would be better.)
- 1/4 cup Chopped Onion
- 3/4 cup Diced Celery
- 1 can Diced Tomatoes (14.5 oz)
- 3 cup Low Sodium Chicken Broth
- 2 tsp Worcestershire Sauce
- 1 tsp Dried Parsley
- 1/4 tsp Salt
- 1/4 tsp Ground Pepper
- 1 Lipton Onion Soup Mix (Optional for extra flavor)
- 7 cup Baby Spinach
- 4 oz Reduced Fat Shredded Cheddar Cheese
