Description
  1. In a large soup pot, cook the beef until brown  Add the onion and celery; saute' until tender.  Remove from heat and drain any excess liquid.
  2. Stir in the tomatoes, broth, worcestershire sauce and seasonings.  This is a good time to add Lipton Onion Soup Mix, if using.  Cover and simmer on low for about 20 minutes.  
  3. Add spinach and cook until wilted about 1-3 minutes.  Top each serving with one ounce of cheese.

  • 1 lb 90% Lean Ground Beef (The leaner, the better. 90% is the min. 93% would be better.)
  • 1/4 cup Chopped Onion
  • 3/4 cup Diced Celery
  • 1 can Diced Tomatoes (14.5 oz)
  • 3 cup Low Sodium Chicken Broth
  • 2 tsp Worcestershire Sauce
  • 1 tsp Dried Parsley
  • 1/4 tsp Salt
  • 1/4 tsp Ground Pepper
  • 1 Lipton Onion Soup Mix (Optional for extra flavor)
  • 7 cup Baby Spinach
  • 4 oz Reduced Fat Shredded Cheddar Cheese
