  • 2 cups fresh strawberries, hulled and chopped
  • 1 cup fresh mint leaves
  • 1 cup granulated sugar
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • A pinch of salt

  1. Prepare the Strawberries and Mint:
  2. Combine the chopped strawberries and 1/4 cup of sugar in a bowl. Let it sit for about 15-20 minutes to macerate and release their juices.
  3. Meanwhile, blend the mint leaves with 1/2 cup of milk until the leaves are finely chopped and well mixed.
  4. Blend the Strawberries:
  5. Using a blender or food processor, puree the macerated strawberries until smooth. If you prefer some chunks in your ice cream, pulse until you reach your desired consistency.
  6. Mix the Ingredients:
  7. In a large mixing bowl, combine the strawberry puree, mint-infused milk, remaining sugar, heavy cream, remaining milk, vanilla extract, and a pinch of salt. Stir until well combined and the sugar is dissolved.
  8. Chill the Mixture:
  9. Cover the bowl and refrigerate the mixture for at least 1-2 hours, or until it’s thoroughly chilled. For best results, let it chill overnight.
  10. Churn the Ice Cream:
  11. Pour the chilled mixture into your ice cream maker and churn according to the manufacturer’s instructions. This usually takes about 20-30 minutes.
  12. Freeze the Ice Cream:
  13. Once churned, transfer the soft ice cream to an airtight container. Place a piece of parchment paper or plastic wrap directly on the surface of the ice cream to prevent ice crystals from forming. Seal the container and freeze for at least 4 hours or until firm.
  14. Serve and Enjoy:
  15. Scoop the ice cream into bowls or cones, and enjoy your homemade strawberry mint ice cream!
Note
  • Mint Flavor: If you want a stronger mint flavor, you can steep the mint leaves in the milk for a few hours before blending.
  • Consistency: For a creamier texture, you can add an additional egg yolk during the mixing process. Make sure to temper it by slowly adding a small amount of the warm mixture to the yolk before combining it with the rest of the mixture.
